How Cocoa Powder Is Made In Factory From Cocoa Beans

How cocoa powder is made in factory from cocoa beans?

Behind this lies an industrial legend that blends traditional wisdom with modern precision technology. Today, let's step into a modern cocoa processing factory and learn how cocoa beans become cocoa powder!

Step 1: Rigorous Selection and Cleaning
The beginning of all great flavors stems from the utmost attention to the raw materials. Cocoa beans arriving at the factory first undergo the following rigorous processing:

  1. Sorting and Air Separation: Vibrating screens and powerful airflow remove impurities such as twigs, stones, and sand from the beans.
  2. Magnetic Separation: Powerful magnetic devices attract and remove even the smallest metal fragments, ensuring the absolute safety of the product.

Step 2: Roasting to Enhance Flavor
After cleaning, the cocoa beans enter the roasting stage, the most crucial step in the entire processing to enhance flavor. The cleaned cocoa beans are sent to a smartly controlled roaster, roasted at precise temperature and time.

Roasting not only brings the cocoa beans to the optimal moisture content but also brings out their unique chocolate flavor. Different temperature and time controls allow each batch of cocoa beans to exhibit a rich and layered flavor.

Step 3: Crushing and Air Separation

  1. Crushing: Cocoa beans are evenly crushed in a crusher to form cocoa chunks.
  2. Air Separation: Utilizing the difference in specific gravity between the bean husk and the cocoa chunks, a circulating airflow blows away the lighter husk, leaving only the pure, oil-rich cocoa chunks.

This step is crucial for ensuring the purity and quality of the cocoa powder. The vibrant dark color and aroma of the cocoa chunks indicate the high quality of the subsequent product.

Step 4: Grinding into a Pulp

This is the qualitative change process from solid to liquid. The cocoa chunks are fed into a large grinder for fine grinding, forming a thick cocoa liquor. This cocoa liquor is the raw material for cocoa powder and cocoa butter. The fineness of the grinding process directly affects the texture and smoothness of the cocoa powder.

Step 5: Separating Cocoa Butter

To obtain cocoa powder, we must separate the oil (cocoa butter) from the cocoa liquor. This process takes place in a powerful hydraulic press.

  1. High-pressure pressing: The cocoa liquor is pressurized, forcing out the cocoa butter, which is then collected and used to make high-end chocolates, cosmetics, etc.
  2. "Residue": The hard cake remaining after pressing is the cocoa cake, the raw material for making cocoa powder.

Step 6: Crushing and Grinding

  1. Crushing: Large pieces of cocoa cake are first crushed.
  2. Fine grinding: The fragments enter a grinder and are ground into an extremely fine powder. The fineness of the grind directly determines the solubility and texture of the cocoa powder.

Step 7: Packaging and Shipping

Finally, this high-quality cocoa powder is precisely weighed and sealed in automated equipment to ensure freshness and quality. After rigorous quality inspection, it is packaged and shipped to destinations around the world, bringing people a rich and delicious experience.
